Region: Champagne, France (Aube, extremely southern Champagne but specifically in village of Polisot in the Côte des Bars)
In the cellar: Dominique only makes this Concordance, a zero sulfur Champagne, in years where the condition and grapes are impeccable. These Pinot Noir grapes are from a single parcel atop a hill where the fruit is the ripest. This is fermented and aged in neutral wood and has no dosage.  
Farming method: Biodynamic
Tasting notes: Fine elegant bubbles with some textural softness. Notes of limestone, raspberries, and spiced apples.
