In the cellar: The wines are then aged on lees old French oak barrels for as long as Gideon feels is needed before being bottled, unfined and unfiltered, with minimal use of sulfites.

Tasting notes:  Brick red; aromas of lavender, eucalyptus, spice. Drinks dry with notable acidity reminiscent of cranberry sauce and a woodsy finish.
