Roquefort

Thousands of years ago, a shepherd was eating his lunch in a cave as his sheep wandered around a nearby pasture. Suddenly, a beautiful woman appeared in the distance and the shepherd, forgetting his rye bread and cheese in the pursuit of love, jumped up and ran to her. A month later, the shepherd and his sheep returned to the pasture and wandered over to the cave for some shade and a rest. “Whaou!” he probably exclaimed when he saw his deliciously moldy rye bread and cheese. He chucked the bread, but man, that cheese with its green and blue fuzz looked too good to waste! He tasted the sketchy cheese, loved it, and so Roquefort was born!

There are only seven creameries that make Roquefort. Our favorite, Gabriel Coulet, is one of the smaller producers and has been family owned and operated since 1872. With the texture of soft serve ice cream, this strong blue has a sweet, spicy, savory flavor arc we love. It tastes like tart strawberries, red currants, and black pepper, with a touch of smoke, and the saltiness of an ocean breeze. Although Roquefort can of course be enjoyed at any time of day, we especially like it for dessert. Bring a creamy wedge, a bar of dark chocolate, and a bottle of port to your next dinner party for an effortless and satisfying way to end the meal.
