P.L.T. Sandwich
Craving a B.L.T., but want to put a spin on it? This requires some creative ingredient stand ins. The flavor-bomb jar of Datterino Tomatoes was the perfect, sweet, juicy sub for the real-deal summer tomatoes. And the prosciutto was so perfectly crisp, it might just be my sub for bacon all of the time…nah, but it was so delicious that I would definitely do it again! Enjoy!
Ingredients
- 4 slices whole wheat bread 
- 6 large slices Pio Tosini prosciutto, sliced not too thinly* 
- 1 jar Yellow Datterino Tomatoes* 
- 2 tablespoons Lara’s Cuisine Tomato Pesto* 
- 4 tablespoons mayonnaise* 
- 4 leaves boston bibb lettuce

Directions
- Heat a tablespoon of olive oil in a large sauté pan. Fry prosciutto slices on both sides until crisp. Set aside on paper towels to drain. 
- Drain the tomatoes and cut in half. 
- In a small bowl, combine the tomato pesto and mayonnaise until well combined. 
- To assemble, slather each slice of bread with the mayo mixture. Layer the tomatoes, prosciutto and lettuce on top of one slice of bread and top with the remaining slice.
